I'd like to think/hope that it's not as simple as that and maybe my pre-AIP diet was just masking this issue for a long time. Like idk maybe I was really inflamed by what I was eating before but not noticing it so my thyroid had to overcompensate and now that I'm eating differently it's like "wtf is happening"? My pre-AIP diet wasn't the worst, but it also wasn't the best. I only ate chicken and turkey and salmon once a week. I ate bread, plain oatmeal, milk, greek yogurt, eggs, bananas and sometimes berries or oranges. I'd eat quinoa, beans, millet, plantains, broccoli, spinach, unsalted nuts, and this super dark chocolate that I think was vegan and made with stevia. I stopped drinking caffeine years ago due to sensitivity and I rarely drank alcohol pre-AIP and certainly don't now. So with AIP, I definitely have more variety in my diet and I'm def eating more greens and cruciferous veggies. The only time I have any raw greens is when I put salad greens or lettuce or spinach in my smoothies.
